She rounded out the meal with a bowl of colorful berries and salted chocolate chip cookies.
According to nutritionist Keri Gans, RDN, Beckham's meal hits all the right notes for a well-rounded, nutritious meal. 'It provides protein and omega-3 fats from the salmon, fiber and antioxidants from the vegetables and berries, and healthy fats from the avocado and tahini,' Gans explains.
While Beckham's consistency is admirable, Gans notes that adding a concentrated source of carbohydrates, like whole grains or quinoa, could provide an extra energy boost. 'It's an easy way to get more vegetables and fiber, which may help you feel fuller, slow the pace of the meal, and support steadier blood sugar afterward,' she adds.
Beckham's penchant for salads has also been making waves in the wellness world, with many experts recommending them as a convenient way to increase daily fiber intake. The National Institute of Health reports that a staggering 95% of American adults don't meet their recommended fiber goals.
When it comes to dessert, Beckham's choice of berries is a savvy one. 'Berries are a great dessert option because they're naturally sweet and provide fiber, vitamin C, and antioxidants,' Gans says. 'Including foods you crave in mindful portions can be part of a realistic, healthy way of eating.'
